Shippoku Ryori
Nagasaki was the only place to keep in touch with overseas during a long Sakoku period at Edo era. Shippoku Ryori is a traditional Nagasaki local cuisine mixed between western such as Netherlands or Portugal and eastern Chinese and arranged as Japanese style. It used to be dishes at home but turn to be a typical Nagasaki Ryotei Ryori.
 
The way we have Shippoku Ryori is to share vermilion-lacquered round table with few people and have dishes on big plates with Jikabashi (your own chopsticks). Kagetsu Shippoku Ryori has kept our tradition, made a menu following the origin and strove for unforgettable taste to our guests.

Shippoku Ryori begins after Okami says 'Please help yourself to Ohire!'. Ohire is soup with a pectoral fin of Tai and also means 'It is our pleasure to host guests serving whole fish per person.'

What you do at first is to have Ohire then toast or host's opening speech begins. Once you have Ohire you can have any dishes you want from the round table. That’s how you enjoy Shippoku Ryori. Each has up to 2 plates as proper manner. This manner saves time to host guests at home.
